

Bok choy is one of those vegetables that scares me. I don’t know how to cook it or what to do with it. Do you? I challenged myself and researched some recipes and here is a very simple recipe that I tried last night.
You know that I am a simpleton when it comes to cooking and recipes. Nothing to complicated or fancy for me. And because I researched and follow the Ideal Protein regimen, I like it when a dish is low carb and healthy. This one is. It’s so simple and really delicious. Pete and I enjoyed this last night with a steak but it would also accompany fish, such as salmon, very well.

Ingredients
1 pound baby bok choy
1 large clove of garlic, minced
2 tablespoons extra virgin olive oil
½ teaspoon sea salt
½ teaspoon fresh ground pepper
Instructions
Preheat oven to 450 degrees
Cut each bok choy in half and wash it thoroughly
Add the bok choy to a large cookie sheet or baking dish and drizzle the oil over it
Sprinkle with sea salt, pepper and minced garlic and toss to coat everything evenly
Arrange the bok choy with the stems towards the edge of the pan. This helps the ends get tender before the leaves get too done
Bake for approximately 8-10 minutes, or until it is tender

Not really a recipe, but I love to stir fry bok choy.
Heat some sesame oil (coconut oil works too) in a wok/frying pan, add in the veg, cook for a few minutes. Drizzle over some tamari/soy sauce/coconut aminos. Stir. Done! Eat!

I love bok choy, but only cook it the way my mom taught me – stir fried Chinese style. Now I have a new way to try – thanks! I’ve got some in the fridge. I’ll let you know how it goes!
