There’s nothing more enjoyable on a hot summer day than an ice cold drink. It is officially pool season, so we need all of the refreshing beverages! Today we will look at a fun twist on a classic drink. They are perfect to enjoy during your backyard staycation or a poolside happy hour. Since most of us are still practicing social distancing, outdoor events are a must this summer. What’s better than serving your guests a refreshing summer cocktail? Don’t forget that 4th of July is rapidly approaching. This is the perfect addition to your holiday menu. Ok, let’s look at this easy and crowd-pleasing recipe.

Refreshing Summer Cocktail Recipe

This cocktail recipe is an updated version of a Ranch Water. I love to enjoy these poolside or when dining al fresco. There are various versions of this, so don’t be afraid to make it your own!

Ingredients:
Ice (preferably crushed ice)
Topo Chico
Lime
Casa Dragones Blanco tequila
Fresh fruit popsicle
Sliced jalapeños
Fresh fruit for topping

We start by making a Ranch Water. First, fill your glass about halfway with crushed ice. Add one shot of tequila and a squeeze of lime. Next, fill the glass about 3/4 of the way full with Topo Chico. Now comes the fun twist! Place the fresh fruit popsicle (I recommend this popsicle) in the glass stick side up. Add in sliced jalapeños and garnish with the fresh fruit of your choice.

Some tips and tricks: This drink can be non-alcoholic. It is still super refreshing and tasty without the tequila. When picking out your fresh fruit toppers, I recommend using the same fruit that is in your popsicle. Also, using ice is super important! The ice freezes around the popsicle so that it slows down the melting process (pictured above). Gotta love science!

Some summertime foods to serve with this refreshing summer cocktail includes chips and guacamole or salsa, mixed nuts or even some fresh ceviche. If you want to drink them with dinner then I recommend pairing it with tacos, grilled fish, hamburgers or a summer salad. A huge thank you to Lynlee Poston for the drink idea.
