Remember when I did the Snap Kitchen 21 days for good challenge in November? If not, here is the blog post about it. You might have wondered how I came off the 5 day juicing process back in to real life. I decided to do it with eating lots of fresh vegetables, fruits and incorporating some of the new Snap Kitchen winter menu items in to my diet. I met with Daniel Magoon, one of the their registered dietitians to get an update on their menu.
I tried all of the items pictured above and a few more and I can tell you that they are delicious. Additionally, I love to grab their salads as they are the perfect portion for a lunch meal. In fact, I took two salads to my agent’s office for a quick in-office lunch meeting just a week ago. Bridgette had the grilled Scottish Salmon salad and I had the Snap Greek salad with shrimp.
My favorite item on the winter menu is the first picture in this post – Crunchy Coconut Shrimp over Thai Basil Rice. It’s got a little spicy kick to it.
