I love connecting with my readers. Recently, I had coffee with Alison M. to pick her brain about what she would like to see on the blog in 2016. She was kind enough to share her thoughts with me when the conversation lead to me being on the Ideal Protein regimen. That sparked a discussion about new years resolutions and of course, diets. Alison and her husband Mike M. have some go-to recipes that they are allowing me to share on the blog. What I love about these recipes is that they are simple, easy and can be made in advance for quick implementation during the week. Below are five fantastic dishes you can make now, serve for dinner or just snack on during the week. A huge thank you to Alison and Mike for sharing these. They will make your life easier.

“The whole idea for me when I do this well is that every Sunday, we prepare all of this stuff. And then I have 6-7 tupperware containers of things to choose from each day. I do bars and shakes for breakfast, lunch and snack. And I snack on these veggies throughout the day. Then for dinner I either do egg whites or chicken, with more veggies” said Alison. I love her organized and very strategic plan. It makes achieving her goal attainable because she has a plan. You know my theory: Lay a plan and then work your plan!

Interestingly enough, I just read this article on the ketogenic diet and its health benefits. Alison and Mike’s recipes fit into this diet/lifestyle. Don’t you find it interesting that sugar is the root of all evil? I just wish it didn’t taste so good.

Mike Malone’s tomato cucumber salad: Two large cucumbers, diced; One package of grape tomatoes, cut in halves; One red onion, diced;
Handful of cilantro, diced; Sprinkle rice vinegar and pepper to taste

Peppers and onions in large baking dish. Season with pepper. Bake at 350 degrees until tender. Eat hot or cold.

Simply sauté brussle sprouts with nothing on them. Delicious hot or cold. If you want to add a little flavor, sauté in a little olive oil and add chopped bacon.

Grilled chicken strips: Simply spray pam in the skillet and sprinkle lemon and pepper on the chicken. That’s it. Eat hot or cold. Add spicy hot sauce for a little kick!

Saute fresh spinach with a little garlic. That’s it. Delicious!
